White Rabbit Cocktail

Sometimes Friday calls for champagne in the afternoon. In preparation for festive holiday parties, we made a spritzer version of a favorite cocktail at the Driftwood Room (Hotel Deluxe in Portland, OR).

Ingredients:

1/4 oz St. George Spirits California Agricole Rum

Dash of The Bitter Housewife Aromatic Bitters

1/4 Lime, juice from

A handful of ice cubes

Dollop of Bee Local Honey (we chose Cherry Wood Smoked, but you should pick a local favorite!)

Champagne

(Makes 1 cocktail)

Add lime juice, rum, bitters and ice cubes to a cocktail shaker. Twist on the lid and give it a good shake. Sieve into a chilled glass with a small dollop of honey at the bottom. Twist lime with a knife and add for garnish. Top with champagne and enjoy!
